Sweetened dried melon slices are produced by infusing sugar into fruit until a specified Brix level is reached. The infused fruit is then dried to a specified moisture range. Processing and packaging are conducted in accordance with good manufacturing practices. The finished product is analyzed for quality and inspected by metal detection.
Packaging: The packaging should be done in controlled atmospheres between 55 and 60% of relative humidity with temperatures around the 41 to 50 F degrees, in triple barrier polyethylene bags gauge 2.7 mms preferably to keep the original packaging conditions.
Handling: The product must be handled under aseptic conditions according to the good manufacturing practices and packaged in atmospheres controlled between 55 and 60% relative humidity, stored and handled in a cool dry location at 5-10 °C (41-50 °F).
Any modification to the conditions described above may result in deterioration of the product and breach of its shelf life.
